4 large sweet potatoes
2 tablespoons rosemary, minced
2 tablespoons garlic
1/2 teaspoon salt
1/2 teaspoon pepper
2 1/2 teaspoons extra virgin olive oil

Directions:
Directions:
Scrub the sweet potatoes well. Put in large pot with enough water to cover by a couple inches. Boil till barely tender, about 15 mins. Put in colander and let stand till cool enough to handle. Peel and slice about 1 inch from each end and discard. Slice into 1-inch rounds.

Adjust oven rack to center and preheat to 450°. Spray a cooking sheet with cooking spray. Arrange the slices in a single layer, spacing about an inch apart.

Combine remaining ingredients in a small bowl. Spoon about half teaspoon of the mixture on each slice and spread with a small spatula. Bake until tender and slightly crusty on top, about 35 mins. Serve immediately.
