1 cup Granulated Sugar
1/3 cup Water
1/4 tsp Cream of Tater
2 Large Egg Whites
1 tsp Vanilla Extract

Directions:
Directions:
In small saucepan over medium-high heat, combine sugar, water and cream of tarter. Cook and stir till bubbly and sugar dissolves.

In a medium bowl, using an electric mixer, beat egg whites just until they start to form soft peaks.

With mixer on high, add hot sugar mixture in steady stream to egg whites. Add vanilla. Continue beating on high, approx. 7 minutes until stiff peaks form and tips stand up.

Frosts on standard cake or 24 cupcakes.

Fold in 2 tbsp cocoa powder after mixing is complete for a yummy chocolate version.
