2 chopped onions
2 chopped carrots
2 chopped stalks celery
2 teaspoons salt
1 teaspoon pepper
4 cups water
2.5 -3.5 pounds whole frying chicken
1 cup chopped fresh parsley
1 1/2 cups small or medium egg noodles
1 cup peas

Directions:
Directions:
Put everything EXCEPT parsley, peas and noodles into Crock-Pot. Cook on Low 8-10 hours or High 4-6 hours. One hour before serving, remove chicken, cool slightly, remove all meat and add it back to Crock-Pot. Add remaining ingredients and cook one more hour, this time on High.

Kids love homemade chicken noodle soup. If you are lucky enough to have some of the homemade noodles made locally by the American Historical Society of Germans from Russia, the noodles stay nice and firm, even in the leftover soup. Those noodles are delicious, and they are available only a few times a year. You can order noodles in advance from AHSGR, but they sell out quickly: (559) 229-8287.
