Directions:
Heat oven to 350º. Line bottoms of 3 (9-inch) round cake pans with parchment paper. Spray with Pam.
Microwave chocolate in water in a microwavable bowl for 1-2 minutes or until melted. Stir after 1 minute. Stir when chocolate is melted until the chocolate is thoroughly dissolved.
Mix flour, baking soda and salt; set aside.
Beat butter and sugar with electric mixer until light and fluffy. Add egg yolks, 1 at a time, beating well after each addition. Stir in chocolate mixture and vanilla. Add flour mixture alternately with buttermilk, beating after each addition until smooth.
Beat egg whites in another bowl on high speed until stiff peaks form. Gently fold into batter. Pour batter into prepared pans. Bake 30 minutes or until cake springs back when lightly touched in the center. After removing pans from the oven, immediately run a spatula between cake and sides of pans. Cool 15 minutes in pans; remove from pans. Remove paper. Cool completely on wire racks.
When cool, spread Coconut-Pecan Frosting between layers and on top.
Spread Chocolate Buttercream Frosting on sides of cake.
