2 bunches of asparagus
Roasted Red Peppers [fresh or in a jar]
EVOO
1 tbsp of Dijon Mustard
Juice of 1 lemon and zest
Capers [optional]
Salt & Pepper to taste

Directions:
Directions:
blanch asparagus for 3 min remove-cool and cut into 3" pieces. Add slices of roasted red peppers;enough that you have a nice balance of colour. In jar shake together the EVOO, lemon juice and mustard and add to asparagus. Add lemon zest and if you use capers - smash a bit to break open and release flavour.
