3 tabs butter
3 tabs flour
2 - egg yolks
juice from 1/2 lemon
1 - c hot water
Salt and Pepper to taste

In a medium size bowl melt the butter for one min.
Whisk in flour until rue consistency
add one cup water
add lemon juice
return to microwave for one min.
Whisk in two egg yolks and return to microwave for one min.

Assemble ham or salmon on English muffin, place poached egg (s) on top and cover with sauce
