3 eggs

2 cups sugar

1 cup vegetable oil

3 cups flour

1 teaspoon baking soda

1 1/2 teaspoon pumpkin pie spice

1/4 teaspoon salt

1/4 teaspoon nutmeg

5 cups Golden Delicious apples, thinly sliced

1/2 cup chopped nuts

For Frosting:
1 (8 oz.) cream cheese, softened

1 pound confectioners sugar

4 tablespoons milk

1 teaspoon vanilla

2 tablespoons caramel ice cream topping

1/2 cup chopped nuts for decoration

Directions:
Directions:
Beat eggs, sugar and vegetable oil until smooth. In separate bowl, mix together flour, baking soda, pumpkin pie spice, nutmeg and salt. Add flour mixture to eggs, sugar and oil mixture. Stir in 5 cups apples and nuts. (Batter will be thick). Pour the batter into two 8-inch greased pans and bake for 40-45 minutes at 350 degrees or until a toothpick inserted in the center comes out clean. Cool on cooling

Frosting:


Mix cream cheese, confectioners sugar (saving out 1/2 cup), milk and vanilla until smooth then add the caramel topping and mix again.

Place one cake on the cake plate, frost top. Place other layer on top of frosting. Remove 1 cup of frosting: add additional confectioners sugar and caramel ice cream topping to spreadable consistency to frost the sides on the cake. Frost the top of the cake allowing frosting to drizzle down the sides. Top with chopped nuts.
