1 lb spaghetti pasta
1/4 cup extra virgin olive oil
1/4 lb pancetta, chopped
1/4 tsp red pepper flakes
6 cloves garlic, minced
1/2 cup dry white wine
2 large egg yolks
frehsly grated Parmesan cheese

Directions:
Directions:
Cook pasta in salted water to al dente. Heat olive oil in large skillet. brown pancetta for 2 minutes. Add the red pepper flakes and garlic and cook 2 more minutes. Add wine and stir up all the drippings. In a separate bowl, beat the yolks and add 1/2 cup pasta water to them. Drain the pasta and add it directly to the skillet that has the pancetta and other ingredients. Pour the egg mixture over the pasta and toss to coat the pasta.
Remove the pan from heat and add a big handful of cheese, lotys of pepper and a little salt. toss the pasta til it soaks up all the egg mixture.
