Two medium pork tenderloins
olive oil
1 chopped onion
1 tin diced tomatoes
3 tbsp white wine vinegar
1 cup of pimento-stuffed olives, cut in half
oregano, salt and pepper to taste

Directions:
Directions:
Saute onions in oil - transfer to casserole
Brown tenderloins all over in same pan and transfer to casserole
Add tinned tomatoes and juice to casserole
Sprinkle with Vinegar, oregano, salt and pepper
Add sliced olives

Cover casserole and cook for 1 hour at 360 F/180C

Add a spoon of sour cream on top to serve.
I also add cayenne pepper to spice it up or small button mushrooms for variety
