Sweet Potato Puffs Recipe

4 medium sweet potatoes
2 T butter
1/2 tsp salt
1/4 C hot milk
2 large egg yolks (save whites)
1 tsp minced onion
1 tsp mined parslet
1 tsp cinnamon
1/4 tsp nutmeg
2 large egg whites
2 T melted butter
sour cream
Parsley sprigs

Boil sweet potatoes in salted water for 30 minutes. Peel potatoes and beat with butter, salt, milk, yolks, onion, parsley, cinnamon and nutmeg. In separate bowl, beat egg whites until stiff, but not dry. Mix 1/3 of the whites into potato mixture. Fold the remaining whites in. Place 6 large circles of the potato mixture on a greased baking sheet. Brush tops with melted butter. Bake at 350 for 25-30 minutes and serve immediately. Garnish with sour cream and parsley sprigs.
