1 large eggplant
1 (10 ounce) can tomatoes & green chiles, slightly drained
14 to 16 saltines, crushed
1 cup grated sharp cheddar cheese

Directions:
Directions:
Preheat oven to 350º. Peel and slice eggplant. Cover with boiling water. Cook approximately 8 to 10 minutes or until tender. Drain well on paper towels. Mash eggplant. Stir in saltines, 3/4 cup cheese and tomatoes. Mix well. Put eggplant mixture in well greased 1-quart baking dish. Sprinkle with remaining cheese. Bake 30 minutes..
For a milder flavor, substitute one drained 14 1/2 ounce can tomatoes for the tomatoes and green chilies.
