1 10 oz. pkg frozen spinach, cooked and drained
1 C milk
4 eggs
1 small can mushrooms, drained (or sauteed fresh)
1/2 tsp salt
1/4 tsp pepper
1 C bread Crumbs
1 C shredded cheddar cheese

Directions:
Directions:
Heat oven to 350º. Butter an 8" square pan. Beat eggs lightly and add milk, 1/2 C cheese, seasonings, spinach, 1/2 C crumbs and the mushrooms. Pour into pan. Mix remaining cheese and crumbs and sprinkle over the top. Bake 30-40 minutes until casserole is bubbling and brown.
