1 1/2 cups sugar, divided
1 tbsp. ground cinnamon
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 cup buttermilk (or make your own - 1 tbsp. vinegar, add enough milk to make 1 cup)
1 egg
1/4 cup vegetable oil

Glaze:
1/4 cup confectioner's sugar
1 1/2 to 2 tsp. milk

Combine 1/2 cup sugar and cinnamon; set aside. Combine flour, baking soda, salt and remaining sugar. Combine buttermilk, egg, and oil; stir into dry ingredients just until combined. Grease the bottom only of a 9"x5"x3" loaf pan. Pour half of the batter into pan; sprinkle with half of the cinnamon-sugar. Carefully spread with remaining batter and sprinkle with remaining cinnamon-sugar. Swirl knife through batter. Bake at 350º for 45-50 minutes or until toothpick inserted near the center comes out clean. Let bread cool. Combine glaze ingredients; drizzle over bread.

I took this bread on camping trips with the Barrows family. A great way to eat the slices is to butter it and fry it like french toast.
