Aunt Fanny's Baked Squash Recipe

3 lbs. yellow summer squash
1/2 c. chopped onions
1/2 c.cracker meal or bread crumbs
1/2 t. black pepper
2 eggs
1 stick butter
1 T. sugar
1 t. salt

Directions:
Directions:
Wash and cut up squash. Boil until tender. Drain thoroughly, then mash. Add all ingredients except 1/2 of butter to squash. Melt remaining butter. Pour
mixture in baking dish, then spread melted butter over top and sprinkle with cracker meal or bread crumbs.
Bake in 375º oven for approximately 1 hour or until brown on the top.

Aunt Fanny's Cabin was a famous restaurant in Smyrna, GA. The waiters, usually young black boys, would come around with a wooden menu around their necks and sing the menu to the customers. The food was delicious as was the ambience. I ate there several times when growing up.
