Bag of frozen Ore Ida Hash Browns
1 onion
1 pound of bacon
1 dozen eggs
1 pint sour cream
1 pound or? generous amount of grated cheddar cheese
Sliced scallions

Directions:
Directions:
Mix in a 2 quart 7" x 11" Pan. Spray Pan.
Fill pan 1/2 full with frozen Hash Browns that have been tossed in a small amount of butter. Mix in 1 chopped onion that has been sautéed in Canola Oil. Brown in 375 degree oven for approximately 30 minutes.

Cook 1 pound of bacon at 400 degrees for 10 minutes until crisp on 2 sides (this can be done the night before).

Break 1 dozen eggs and scramble until in the soft stage. Layer on hash browns. Spread with a thin layer of sour cream. Spread evenly with crumbled bacon. Top with a generous amount of grated cheddar cheese. Reheat in oven for approximately 20 minutes. DO NOT OVER COOK.

Top with a dollop of sour cream and sliced scallions.

We discovered this 'hearty' dish when Dad and I celebrated our 49th wedding anniversary with a trip to The Orchard Hill Country Inn, in the quaint little town of Julian, Ca.
The following year, we celebrated our 50th Anniversary at Lake Tahoe, Ca. for an entire week with our beautiful children and grandchildren. A week of good food, fun, laughter and precious memories. Dad made this dish for breakfast one morning.
