for 2 layer cake: for 3 layer cake
1 C sugar 1 1/2 C sugar
1/4 t. salt 1/4 t. salt
1/4 t. cream of tartar 1/4 t. cream of tartar
5 T cold water 7 1/2 T cold water
2 egg whites 3 egg whites
1 t. vanilla 1 1/2 t. vanilla

Directions:
In a saucepan mix sugar, salt, cream of tartar, and water. Stir. Bring to a full rolling boil over medium heat. Boil for 4-5 minutes. Place egg whites in large mixing bowl. DO NOT beat egg whites until syrup is cooked. Pour syrup slowly over egg whites while beating egg whites at high speed. Continue add syrup slowly until all syrup is added and is in stiff peaks. Reduce speed and add vanilla to frosting. Mixture should be spreading consistency. Spread on cooled 9" cake layers. I put the frosting on as soon as it is made otherwise it doesn't spread easily. I always make 3 layers on the 2 layer German Choc. cake mix otherwise it is skimpy. The 2 layer works best on a 9x13 pan. Make this the day your are serving. It is best that day.
