2 C. sugar
1 1/2 C. cooking oil
2 T. vanilla
2 eggs, well beaten
1 tsp. salt
1/2 lemon, juiced
3 C. flour
1 1/2 tsp. soda
3 C. tart apples, peeled and chopped
1 1/2 C. pecans
Directions:
Directions:
Preheat oven. Mix sugar, oil and vanilla, eggs, salt and lemon juice. Beat well. Sift flour and soda and gradually add to first mixture. Add apples and pecans. Bake in tube pan. Batter is quite stiff before apples are added.

Bake 325º for 1 1/2 hours.
