CURRY SAUCE
3T butter
1med onion chopped
1 c. celery stalk diced
1 c. carrots diced
1 T curry powder
1 clove garlic chopped
2 T flour
1 T tomato paste
2 10-1/2 oz cans chicken broth
1 T almond paste
1 T currant jelly
dash of ground cloves
dash of cinnamon
1/4 t dry ginger
1/4 t salt
1 can pureed pumpkin
1/2 c sherry
1 c. heavy cream

SIDE BOYS
Major Greys Chutney
salty cocktail peanuts
Shredded cooked bacon
raisins
canned shredded coconut
chopped hardboiled egg whites
chopped hard boiled egg yolks
India sweet relish
chopped cooked chicken
boiled shrimp

cooked rice as desired

CURRY SAUCE
Saute onions, carrots, celery in butter until golden, add garlic, flour, curry and tomato paste. Gradually add broth, then every thing else except cream. Simmer uncovered for 10 minutes uncovered. Run through blender until smooth.Freeze if not being used immediately. When ready to serve, add 1 cup of cream and heat.
Serve over white rice. We like basmati rice best.
SIDEBOYS
We serve our sideboys in glass custard cups, 1 container for each sideboy. Diners place rice in their bowl and add curry sauce, then whatever sideboys they wish to sprinkle over the top. An enjoyable meal and lots of fun to serve. When we serve it, we look for whatever leftovers would make good sideboys,
The Dutch also used egg rolls,sambal, fish, pickles etc as side boys.

Rice table is a dish which was popular in the British Navy and at the US Naval Academy. It originated in Dutch Indonesia as a way for the Dutch plantation owners to display their merchandise to traders and allow them to sample the wares.
It has now become somewhat politically incorrect in Indonesia as a symbol of Dutch colonialism, but its still a great and fun meal for company. Use your imagination for sideboys!
