2 cups cracked wheat
2 cups very hot water
1 cucumber, chopped
2 small tomatoes, chopped
1 bunch green onions
2 cups fresh chopped parsley
1 clove garlic, minced
1/2 cup fresh lemon juice
3/4 cup extra virgin olive oil
1 tablespoon pepper
2 teaspoons salt, or to taste

Directions:

Soak the cracked wheat in the hot water until the water is absorbed, about 30 minutes. When it's ready, drain any excess water, and if necessary, squeeze dry.

Meantime, prepare the vegetables for the salad and mix the dressing ingredients together. Set aside.

Stir the prepared wheat, other salad ingredients, and dressing together in a bowl.

Serve chilled. 8 cups, about 16 servings.

My sister Kelly had a friend in college named Hani. He was Lebanese and he used to cook for her. This was one of the things she talked about often. The first time I tried it, I was at a Mediterranean restaurant in Omaha, which she took me to, and I have to say, it was absolutely delicious. And, if made with 1/2 cup olive oil instead of 3/4 ....it is 3 points per 2/3 cup serving.
