Ingredients: 1 Lb. bacon (1/2 Lb. for 2 people) White bread (2 slices per person) Eggs (2 large eggs per person) Salt & Pepper to taste

Directions:Cut bacon strips into 1/2" pieces and fry in non-stick pan. Remove bacon pieces and drippings and put in seperate bowls. Do not throw out bacon grease. While the bacon is cooking, tear bread into small bite size pieces. Put in same pan and toast the bread lightly. Crack eggs into a bowl. Add salt & pepper but DO NOT beat the eggs. Put bacon back in pan with the bread and add enough of the bacon grease so the eggs won't stick. Drop the eggs one at a time on the bread and bacon mixture. With a spatula, gently toss the bacon, egg and bread mixture until the eggs have coated everything and are completely cooked. Serve hot. |

Notes: This breakfast recipe has been cooked for us by my Mom (Luana) for as long as I can remember. We are not sure where the name comes from because there are other dishes with the same name that have nothing to do with breakfast. But this dish has always been and will be our Slum Gullian. The secret to this recipe is to not beat the eggs. It just does'nt taste the same. It is also a perfect quick breakfast for camping. It may take a few tries to get it right, but when you do you'll know. I hope you will enjoy it and make it one of your family traditions. Kids love it!!! It can also be adjusted for any number of people.
