4 T cocoa
1 cup white sugar
1 cup brown sugar
1/8 tsp salt
1 cup cream
1 T corn syrup
1 T butter
1/2 tsp vanilla
Directions:
Directions:
Bring all but the vanilla to boiling point while stirring. Boil gently to soft ball stage, stirring now and then. This will take some time because you never, never use high heat when making candy. Once you reach soft ball stave, remove from heat and add vanilla. Now comes the secret for creamy fudge. Place pan in cold water and let stand 4 minutes without stirring. Remove from the cold water and beat until mixture thickens and loses its gloss, about 5 minutes. Spread into a buttered pan 9 x 13.

For mocha fudge, stir 1 T dry instant coffee into dry ingredients and proceed.

This is a never fail fudge recipe. Don't be in a hurry. If you think it takes a long time to reach soft ball stage, wait until you try hard ball stage.
