1 lb. can salmon or tuna
2 tbsp. butter
3 tbsp. flour
3/4 cup milk
1 tsp. vinegar
1 egg
1 1/2 cups finely crumbled potato chips
Salt
Pepper

Directions:
Directions:
Drain fish, remove any skin or bones and flake coarsely. Melt butter, blend in flour and gradually stir in milk. Cook, while stirring, until sauce boils and thickens. Add fish, vinegar and seasons. Cool. Shape into 6-8 croquettes, dip in beaten egg then in potato chip crumbs. Fry in deep fat, heated to 365º to a golden brown, about 5 minutes each.
