1 pound sausage
1 onion, chopped
2 teaspoons chopped garlic
4 to 6 Green Peppers, cut in strips
2 Tablespoons olive oil
1 8 ounce can tomato sauce
1 Box Near East Rice Pilaf

Directions:
Directions:
Cook onion, garlic and sausage together in olive oil for 30 minutes. Add green pepper and tomato sauce---cover and simmer for 15 to 20 minutes or until peppers are tender.
Serve over the prepared Rice and enjoy!

This recipe was given to Dad by his secretary, Marilyn Matisoff. She always brought her lunch to work and this particular dish smelled so good that he asked her what it was. Which, of course, resulted in him getting to share it and she kindly wrote the recipe down for him. It has become one of our favorite quick and easy meals.
