2 large eggs, lightly beaten
1/2 cup flour
1/2 cup milk
1 pinch salt
1 pinch nutmeg
3 tbsp. butter
confectioners' sugar, for dusting

Directions:
Directions:
Place eggs, flour, milk, salt and nutmeg in a medium bowl; whisk until combined. Batter may be slightly lumpy. The batter may be made a day ahead and chilled overnight. Melt butter in a crepe pan or cast iron skillet. Pour batter in hot pan and transfer immediately to oven. Bake at 425º oven until golden and puffy, about 10 minutes. Dust with confectioners' sugar. Serve immediately.

Triple ingredients, bake for 20 minutes in a casserole dish and you have German pancakes!
