4 1/2 cups flour
1 1/2 tsp. salt
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 1/2 T. cinnamon

1 1/2 cups oil
3 cups granulated sugar
1 1/2 T. vanilla
3 cups canned pumpkin
2 cups chopped raisins

Directions:

Mix flour, salt, baking powder, baking soda and cinnamon. In separate bowl, mix oil, sugar, and vanilla, then add pumpkin. Mix in dry ingredients, then add chopped raisins, dates or other fruit.

Grease and flour 4 medium loaf pans (4”x8”). Bake at 325º for 55 minutes.

Tip: Mix the salt, baking powder, soda and cinnamon in a small lidded container and shake. The cinnamon colors the mixture making it easier to determine when it is well blended into the flour. Fruit should be chopped to remain suspended in batter during baking. May substitute apples or zucchini for pumpkin.
