2 lb. pork tenderloin roast
1/4 cup soy sauce
3 T. dry vermouth
1 garlic clove, crushed
1/2 t. cinnamon
1/2 t. thyme

2/3 cup apricot preserves
1/4 cup chile sauce
1/2 cup water

Directions:
Directions:
Marinate pork tenderloins in mixture of soy sauce, dry vermouth, garlic, cinnamon and thyme for several hours, turning occasionally:

Place roast on rack in shallow pan and tuck under shallow end to avoid over cooking. Drizzle a bit of marinade over meat. Roast 45-50 minutes at 375º until meat thermometer reaches 170º.

During roasting, combine following ingredients in saucepan: apricot preserves, chile sauce, water, remaining marinade.

Simmer sauce about 15 minutes. Drizzle sauce over meat before serving. Serve remaining sauce in gravy boat.
