crab meat - 1 lb. (3 small cans)
3 T. butter
4 T. flour
1 cup milk
1/4 tsp. salt
2 T. parsley flakes
1 cup dried bread crumbs
2 eggs
1 tsp. water

Directions:
Directions:
1 cup Thick White Sauce
Melt butter over low heat – remove from heat. Gradually mix in flour, stirring until thoroughly blended and smooth. Return to heat and gradually add 1 cup milk, stirring in thoroughly. Simmer until sauce thickens. Add salt and parsley flakes.

Thoroughly drain crab meat and remove all shells, then mix meat into sauce and chill 3 hours.
Make mixture into patties by rolling into balls, then flatten into patties and chill again.

For breading:
In shallow bowl, beat 2 eggs with 1 tsp. water. Pour breadcrumbs onto separate plate. Dip patties in bread crumbs, flip, then coat edges.
Dip into egg mixture, then bread crumbs again

Fry in hot fat 360º until golden brown.

Makes approximately 8 medium crab cakes. Serves four.
