1/2 stick butter, melted
1 1/2 to 2 cups onion, diced
1/4 cup flour
4 cups chicken broth
1 to 1 1/2 cups instant potato flakes (start out using 1 cup)
3-4 cups half and half milk
3 large red potatoes, baked (or boiled), diced
salt and pepper, to taste

bacon, crumbled
cheese, grated
green onions, chopped
sour cream
Directions:
Directions:
Saute onions in butter and add flour. Cook until thick (mixture will be lumpy). Add broth and instant potatoes. Stir or whisk to smooth out. Simmer for a few minutes and allow flavors to develop. Add half and half and diced potatoes. Simmer until heated through. Serve with following garnishes:

bacon, crumbled
grated cheese
chopped green onions
sour cream
