Tomato Gravy
3/4 cup extra virgin olive oil
8 garlic cloves, minced (use less if scared)
1 med sweet onion, chopped fine
3 - 35 oz cans crushed tomatoes
1 - 35 oz can tomato puree
1/2 cup chopped fresh basil
2 TBLS salt
1 cup sugar
1 tsp fresh thyme

Meatballs
2 lbs ground beef
1 cup chopped onions
4 garlic cloves
3 eggs
1/2 cup chopped parsley
4 slices white bread
1 cup milk
1 cup grated Parmesan cheese
1 cup breadcrumbs (if desired)
2 tsps salt
1/2 tsp pepper

Directions:
Directions:
Tomato Gravy (that's Italian for tomato sauce):
Saute onions and garlic until soft. Add remaining ingredients, stir and simmer 1 hour. Add meatballs and simmer another hour.

Meatballs:
Chop onions, garlic and parsley. Soak bread in milk, then mix in the eggs and cheese (hand mixing works best, unless you are lucky enough to have a food processor). Add this mixture to ground beef with salt and pepper. Add bread crumbs (if needed) to make a soft firm ball. Roll meatballs, place on baking sheet and bake in 350
oven 30 to 40 minutes. Put in gravy and simmer for 1 to 2 hours.
