1 c oil (vegetable or olive oil)
2 large egg yolks
1/4 t salt
1/4 t white pepper
3 T lemon juice

Optional flavors: Choose from tarragon, garlic, curry etc. Amounts vary - I'd start out with 1/2 t of preferred spice and add more to suit your taste.

Whisk eggs until well blended. Add salt and pepper. Whisk. Add oil a drop at a time and whisk well, gradually increasing amount of oil you add, whisking each addition until well blended. When you get down to about 1/4 c of oil, add lemon juice and remainder of oil. Whisk again. Mixture will slowly begin to thicken. Refrigerate. Mayo keeps up to 3 days.

I can't emphasize enough the importance of gradually adding the oil...if mixture doesn't thicken, start over!
