3 Eggs
1/2 c. Water
1/2 tsp. Salt
1/4 tsp. Nutmeg

In mixing bowl, mix flour and salt, and nutmeg
. Dig a trench in the middle of the bowl and add the eggs and water. Whisk together slowly stirring in the flour until smooth. Add nutmeg.

In a pot, bring 4 quarts of water and 1/2 tsp. salt to a rolling boil. Place the dough in a spätzel tray, and slide the tray back and forth over the boiling water. You may want to apply some slight pressure to the dough to get it through the grater.

For best results, make only as many noodles that will line the top of the water in the pot. They cook better when kept separated, so you should gently stir the pot so the noodles do not stick together. During cooking, the noodles will rise to the top.

Boil for about 5 minutes. Test a noodle; it should be tender, yet still firm. If making many batches, us a skimmer to remove the noodles from the pot to a colander to reuse the same water. Drain and quickly rinse the finished noodles with warm water.


I usually cook ahead of time and then put drained dumplings in the refrigerator to cool. When it is time to eat saute and lightly brown noodles in fresh chives and butter.
