3 bulbs of garlic
1/4 cup olive oil plus 4 Tbsp.
1 cup onion chopped
1/2 cup celery chopped
1/2 cup carrot chopped
1/2 cup flour
6 cups chicken stock
1/2 tsp. fresh thyme
1 tsp. fresh oregano
7 oz. Brie - rind removed
white pepper and salt to taste

Preheat oven to 350º.
Separate garlic but do not peel and place in baking dish. Drizzle with 4 Tbsp. olive oil. Cover and roast about 30 minutes or until garlic is golden and tender. Remove from oven and cool.
Heat remaining 1/4 cup olive oil in a heavy skillet; add onion, celery, carrot and sauté until tender.
Add flour to onion mixture and stir about 3 minutes until brown. Add stock gradually while stirring to avoid lumps and simmer until slightly thickened.
Peel cooled garlic and purée with about a cup of the soup until smooth. Return puréed mixture to pan, stir in herbs and heat soup until boiling. Cut Brie into squares and gradually add to soup, stirring until melted. Season to taste with the white pepper and salt.
Brie can be substituted with Goat cheese, if desired.
