1 pkg(10 oz) frozen chopped spinach or a big bag of fresh baby spinach
3 tbsp of olive oil
1 garlic clove minced or pressed
3 tbsp Parmesan
2 eggs
Directions:
Directions:
Cook garlic in oil (not too hot); dump spinach in and cook down to wilted; spread over bottom of skillet; sprinkle one tbsp of Parmesan; cook, and turn until hot; break eggs and stir until all is creamy; top with remaining Parmesan!
