6 pieces of chicken or 3 breasts cut in half and marinated with Adobo seasoning.
Olive Oil.
2 tablespoons of Recaito (chopped onion, garlic and cubanelle pepper mixed).
2 tablespoons of spanish red pepper, chopped.
2 tablespoons of spanish olives, without juice.
1 envelope Goya seasoning, "Sazon".
1/2 small can of tomato sauce.
1 Bay Leaf
1 large potato or two medium ones cut in quarters.

Directions:
Directions:
Sautee the seasoned chicken in a large saucepan or deep frying pan with olive oil, browning on both sides at medium-high heat. Add Recaito, spanish red pepper, olives, potatoes, seasoning and tomato sauce and cook for 45 minutes to an hour until chicken is tender.
Optional: add 1/4 cup beer or cooking wine to the sauce for added taste.
