Microwave Potato Chips Recipe

3 medium red potatoes
1/4 c olive oil
1TB sea salt
Spices (optional, your choice of spice, I like to add pepper)

Layer 3 paper towels on a mircowave paper plate.

Scrub and slice potatoes into 1/16' slices. Brush with olive oil (I use the olive oil spray) and light sprinkle with the salt and additional spices. Be sure to season both sides of the potato. Arrange on the paper towels, do not overlapped, you may need to do multiple batches. Microwave for 3 minutes, turn the chips and microwave for an additional 2-3 minutes or until dry and brittle. Let the chips cool for a minute before eating. Store in an airtight container.

These are good and add a different touch to a grilled burger or hotdog. The toppings are endless. Just be careful with the seasonings, they intensify during the dehydration process.
