Lemonade Meringue Pie Recipe

3 eggs separated
1 package )4.6 oz) cook and serve vanilla pudding
1 1/4 c milk
1 c. sour cream
1/3 c lemonade concentrate
1 TSR lemon juice
1/4 TSR cream of tarter
6 DB sugar
I 9" pie shell (see recipe for homemade)

Preheat oven to 350 º
Place the egg whites in your mixing bowl and leave them stand for 30 minutes to come to room temperature. Meanwhile, use a large saucepan and combine pudding mix, milk, and sour cream, stirring until smooth. Cook over medium heat until the mixture has thicken and is bubbly, takes about 15 minutes. Reduce the heat, continue cooking for an additional 2 minutes, stirring constantly.

Remove from heat, slowly stirring in 1 c of hot filling in egg yolks, return all to the pan. Bring to a gentle boil;continue cooking for another 2 minute, stirring constantly. Remove from heat, slowly add the lemonade concentrate, keep warm.

Add Lemon juice and cream of tartar to egg white and beat at medium speed until soft peaks form. Gradually add sugar until stiff glossy peaks form and sugar is dissolved.

Pour warm filling into pie shell. Spread the meringue over filling (CRITICAL: seal all the edges with the meringue to ensure proper seal for topping. Meringue must cover all the edges of the pie crust)

Bake for 15-20 minute or until topping is golden brown. Cool on rack for 1 hour. Refrigerate 3 hours prior to serving.

This recipe takes a while to make and has a degree of difficulty. Follow the instructions, take your time and I promise you, it is worth the effort!
