3 pounds potatoes cubed, boiled, & cooled
1/2 cup finely chopped red onion
1/2 cup finely chopped celery
1/2 cup diced red bell pepper
1/2 cup sweet pickle relish
4 hard-boiled eggs, coarsely chopped
2/3 cup Miracle Whip
2 tablespoons Dijon mustard
1/2 teaspoon salt
1/2 teaspoon black pepper

Mix all ingredients except potatoes in a bowl. Pour over potatoes, tossing gently to coat. Cover and refrigerate at least 8 hours
