1 C. butter
2 C. sugar
5 egg yolks
1 1/3 C. milk
4 C. Swan's Down Cake flour (Is it still made?)
4 tsp. baking powder
1/2 tsp. lemon extract
Pinch of salt
2 egg whites, beaten

Filling:

4 T. Cake flour
1/4 C. lemon juice
2 T. butter
3/4 C. sugar
1/2 C. water
1 egg, beaten
Dash of salt
Directions:
Directions:
Cream butter and sugar. Add egg yolks and beat. Add milk and extract. Add flour and baking powder and salt. Then add beaten egg whites. Pour into 3 round cake pans and
Bake 350º until done.
Mix filling ingredients and cook over medium heat until thick and clear. Enough to fill and frost 3 layers with filling.

This was one of mother's favorites when I was young. Everyone seemed to love it but her children preferred chocolate. Actually, it is light and a delicious lemon cake.
