4-5 lbs. potatoes, cut in wedges
1 stick of butter, melted
1 med. white onion, sliced
1-2 garlic cloves, minced
1 tsp salt
1 tsp pepper
1/2 tsp ground dried oregano

Directions:
Directions:
Preheat oven to 350. Coat the potatoes in butter, toss with onion and garlic and sprinkle generously with salt, pepper and oregano. Place in a baking dish, cover with aluminum foil and bake for 1 hour, stirring occasionally. After 1 hour, removed the foil and continue cooking for another 30 minutes.
