1 cup shortening
3/4 cup brown sugar
1 egg
1 T. water
2 cups grated carrots
1 cup flour
1/2 tsp baking soda
1 TSP BAKING POWDER
1/2 TSP NUTMEG
1/2 TSP SALT
1/2 TSP CINNAMON

Directions:
Directions:
Cream shortening and sugar.
Add egg, water and carrots. Sift dry ingredients and add to carrot mixture. Pour into greased ring mold. Refrigerate overnight or 5-6 hours. Remove from refrigerator 1/2 hour before baking. Bake 1 hour at 375 degrees.
