1 eggplant, pared and cut in 1/2 inch slices
1/2 cup butter, melted
3/4 cup fine dry Italian bread crumbs
1- 8 oz. or 10 3/4 oz.spaghetti sauce w/mushrooms
1 T. dried oregano
Mozzarella cheese
1 lb. sausage

Directions:
Directions:
Brown sausage, drain. Add spaghetti sauce. Dip eggplant in butter then bread crumbs. Place on greased baking sheet. Spoon sauce on each slice; sprinkle with oregano. Bake at 450º for 10-12 minutes. Sprinkle with cheese and bake until melted.
