3 C. sugar
4 egg yolks (Beat and add 1/2 C. milk to yolks)
5 1/2 T. cornstarch
Pinch salt
4 C. milk
1 tsp. vanilla
2 T. butter
2 pkgs. coconut, shredded

Egg whites for the above 4 eggs
1/4 tsp. cream-of-tartar
5 T. sugar

Directions:
Directions:
Mix all ingredients except vanilla, coconut and butter. Cook over low heat until mixture comes to a boil and gets nice and thick. Cook for another couple of minutes ("to make sure the eggs are cooked"). Take off stove and add butter, vanilla, coconut. Let cool slightly and pour into cooked pie shell. Some like whipped cream on top but you can make meringue. Beat egg whites until stiff, adding sugar, cream-of-tartar gradually as you beat. Spread over pie making sure meringue touches the crust on the sides. Bake 325º until meringue is browned on top.
