3 cups (packed) dark brown sugar
3 cups heavy whipping cream
6 tablespoons unsalted butter
3 tablespoons honey
3 vanilla beans, halved lengthwise
3 tablespoons bourbon
10 large bananas, unpeeled
2 quarts Graeter's ice cream
pecans, toasted, chopped
whipped cream

Directions:
Directions:
Combine brown sugar, cream, butter and honey in heavy saucepan. Scrape in vanilla seeds; add beans. Stir mixture over medium heat until sugar dissolves. Increase heat and bring to a boil. Reduce heat to medium-low and boil gently until sauce coats spoon thickly and is reduced to 3 2/3 cups, stirring occasionally, about 25 minutes. Mix in bourbon. Can be made ahead and refrigerated. Just heat when ready to use.

Prepare grill (medium-high heat). Cut unpeeled bananas in half lengthwise. Arrange, cut side up, on baking sheet. Brush cut sides with caramel sauce. Place bananas, still cut side up, on grill rack. Close grill lid. Grill until peels are slightly charred and banana is tender and beginning to come away from the peel, about 4 minutes.

Place one banana half, cut side up, on each plate. Top with ice cream, warm caramel sauce, pecans and whipped cream.
