1 med. onion, chopped
2 cloves garlic diced
2 tsp. olive oil
10 oz frozen spinach, thawed, squeezed dry
3 cups cooked rice
1/2 c. Parmesan cheese
1/4 c. milk
4 eggs
salt & pepper to taste
1 cup shredded mozzarella cheese

Directions:
Directions:
Saute the onions & garlic in oil. Mix with spinach and rice. Use fork to beat eggs, add milk, salt & pepper, Parmesan cheese to mixture. Mix into other ingredients. Spread mixture into 11 x 7 x 2 inch pan (or equivalent). Distribute shredded mozzarella cheese over the top. Bake at 350 for 22 minutes. Check. Cheese should be lightly browned.

Make rice ahead of time. Refrigerate. This works for breakfast, potlucks, cut into smaller pieces for appetizer. Add seasoned salt or pepper to make spicier. Add 1 T. butter to saute onions.
