Peel 10 ripe (yellow) cucumbers and scoop out seeds. Cut into 1/2 inch strips, 2-3 inches long
Put on cold water with 1 teaspoon powdered alum
Let sit over night
Cover with a towel to keep the smell down
Add one red pepper cut in pieces with the pickles
In the morning drain pickles and pepper and pat dry
Syrup
4 cups white vinegar
3 cups water
6 cups sugar
1 teaspoon celery seed
1 teaspoon mustard seed
1 teaspoon turmeric (mix this with the sugar so that it will mix in easily)
1 teaspoon pickling spice (Make bag to put the spice in)
Boil three minutes
Add cucumbers to syrup and cook until pickles turn clear (about 20 minutes) Syrup will be enough to cover. Put in sterilized jars. They seal themselves. Makes ~ 6 pints.
