For the topping:
3/4 c. unseasoned breadcrumbs
3 T. butter




For the Fish:
1-1/4 lb. tilapia fillets
3 T. extra virgin olive oil
salt and freshly ground pepper to taste
1/2 lemon quartered

Directions:
Preheat broiler. Saute breadcrumbs briefly in 3 T. butter over medium-low heat. Set aside. Brush baking pan with a bit of the olive oil. Brush rest of oil on fish and sprinkle with salt/pepper. Place fillets about 4 inches from heat source. Rotate pan 1/4 turn every 2 minutes or so to brown fish evenly. Add more olive oil if fish looks dry. About 2 min. before fish is done, spread on the breadcrumbs. Allow a total cooking time of 8-10 minutes per inch of thickness of fish. Serve with lemon wedges.
