French Onion Soup Recipe

1/4 C butter
1 T olive oil
4 !/2 lbs. yellow onions, peeled and sliced
1 tsp chopped fresh thyme
1 tsp sherry vinegar
6 1/4 C chicken or vege stock
1 12 T flour
2/3 C dry white wine
3 T brandy
salt and pepper

Croutes:
day old french bread
1 garlic clove
1 T mustard
1 C grated gruyere

Directions:
Directions:
Melt butter with oil in large pan. Add onion and cook over medium heat for 5-8 minutes, stirring occasionally until onion start to soften. Stir in thyme. Reduce heat to very low and cover and cook for 20-30 minutes stirring frequently until onions are soft and golden. Uncover and increase heat slightly. Cook 5-10 minutes 'til onions start to brown. Add sherry vinegar and increase heat again and cook until onions turn a deep golden brown, approximately 20 minutes.
Add stock and stir in flour. Add wine and brandy and season to taste. Simmer another 10-15 minutes.
Croutes: place bread on greased baking sheet and bake 15-20 minutes at 300 º 'til slightly browned. rub with carlic and spread on mustard and sprinkle grated cheese over slices.
Ladle soup into bowls, float a croute on each and grill 'til cheese melts and browns.
