2 large cans pumpkin
2 onions, chopped
3 garlic cloves (or 2 tsp. chopped from jar)
3" piece fresh root ginger, grated
1 tsp ground coriander
1/2 tsp ground turmeric
pinch cayenne pepper
4 C vege or chicken stock
salt and pepper

Directions:
Directions:
Heat 4 T olive oil in a large pan and add onions, garlic and ginger and cook gently for 4-5 minutes. Add coriander, turmeric and cayenne and cook for another 2 minutes. Stir in pumpkin and stock, bring to boil, reduce heat and simmer for 20 minutes.
Ladle into bowls and garnish with sesame seeds and fresh cilantro if you have it!
