2 pkg of cream cheese- 8 oz
1 ¼ C confectionary sugar
¼ C fresh orange juice
Grated rind of 2 oranges
3 t lemon juice
1 small can crushed pineapples well drained
Orange food coloring
½ pint heavy whipping cream- or cool whip
9 inch graham cracker pie crust
Toasted coconut or mandarin orange slices

Beat cream cheese, sugar, OJ and rind until fluffy. Stir in lemon juice, pineapple and food coloring and blend well. Gently fold the cheese mix into whipped topping. Pile in crust and chill till firm. Serve topped with toasted coconut or orange slice.
