1 pkg frozen okra or equivalent of fresh okra
1 small onion
1 can Ro-tel tomatoes
Salt and pepper to taste

Directions:
Directions:
Fry okra and onions together until tender. Add salt and pepper. Add Ro-tel tomatoes or plain tomatoes with a little green hot pepper "chipped up" in them. Simmer together for 30 to 45 minutes over low heat. Recipe can be doubled.
